👵 Genevieve Adams’ Famous Onion Rings Recipe

Ingredients:

• 4 NuMex Sweet Onions (sliced into ¼” rings)
• 4 eggs, beaten
• 4 cups whole milk
• 4 cups all-purpose flour
• ½ cup cornstarch
• 2 teaspoons baking soda
• 1 tablespoon salt

Instructions:

1. Slice onions into ¼" thick rings. Keep rings whole.
2. In one bowl, beat eggs and stir in milk.
3. In a separate bowl, mix flour, cornstarch, baking soda, and salt.
4. Dip onion rings in the egg-milk mixture, then dredge in the dry mix until coated.
5. Fry in oil heated to 350°F for 2–3 minutes or until golden brown.
6. Drain on paper towels and serve hot. Feeds 15–20 people.
